How we calculated this
There's no published external standard for how much grill space a person actually needs, or how much extra room a whole cut like a brisket or a whole chicken needs around it. We looked, and nothing we found meets our own bar for a figure we'd publish as settled fact.
The ~72 sq in per person and 25% whole-cuts buffer this calculator runs on are our own working estimates, not an external number we're passing off as one. We built them from our own judgment about how much room food and airflow actually need, and we'll refine both numbers as we test more setups ourselves.
